Pumpkin Muffins

Pumpkin Muffins

4 eggs
2 cups white sugar
1 1/2 cups oil
1 small can pumpkin
3 cups flour
1 tbsp cinnamon
2 tsp baking powder
2 tsp baking soda
1 tsp salt
Sprinkle of brown sugar

Beat eggs slightly, add sugar, oil and pumpkin and beat thoroughly. 

Add dry ingredients and mix until smooth. 

Fill greased muffin cups 2/3 full and sprinkle tops with brown sugar. 

Bake in a 375 degree oven for 15 - 20 minutes.
