3 medium white and red onions, cut into 1" wedges
Olive oil for drizzle
Salt pepper
Preheat oven to 400 degrees
Place onion wedges on a 15 X 10" baking sheet. Drizzle with olive oil, sprinkle with salt and pepper & toss to coat.
Roast 35 - 40 minutes or until tender and light brown, stirring occasionally.
