1 lb small button mushrooms
5 tbsp olive oil
2 tbsp red wine vinegar
1/2 tsp dry mustard
1 tsp fresh herbs, finely chopped
1/2 tsp icing sugar
Salt and pepper
Shake all dressing ingredients in a jar with a lid. Pour dressing over mushrooms and stir gently until well coated. Store tightly covered in refrigerator.
